Avocado BLT with Chipotle Mayo

I am married to the sandwich king.  He love sandwiches, and he makes good ones.  I’d say the reuben is his specialty.  So, usually he is in charge of all things smooshed between two slices of bread.

Last week, I had some ripe avocados and wanted to use them in something other than guac.  A while ago, I can’t remember where, I came across the chipotle mayo idea and had been wanting to use it.  So this little sandwich got stuck in my head.  While I’m not sure it measures up to the hubby’s usual behemoth sammies, I’d say it was a success!

you will need:
4 slices hearty bread, toasted
6 pieces of bacon, cooked until crisp
1 avocado, sliced
tomato slices
¼ cup mayo
2 tablespoons chipotle peppers in adobo sauce

Toss the mayo and chipotle peppers in a small blender and pulse until smooth.  Cook your bacon, I usually just toss it in the microwave.  Toast the bread and get the rest of the ingredients ready.

Slather the chipotle mayo on each slice of bread.
Layer on the bacon, avocado, lettuce and tomato.  Top with another slice of bread, then slice and eat!

Easy peasy and super delicious.  That mayo definitely packs a punch of heat, so if you are kinda wimpy like me, you may one to only slather it on one piece of bread instead of both!
