Barbecue Chicken Gumbo

On my glorious days off with my little man, I often watch some daytime television…yes, I’ll admit it.  I love me some Kelly & Michael.  So sometimes, I just keep it on that channel throughout the morning and do my thing around the house, checking in every so often.  Right around Thanksgiving, I saw an episode of Rachael Ray where she made this delicious gumbo with turkey leftovers.  It quickly went to the top of my list of things to make after my favorite holiday.  Since we didn’t have enough leftover turkey, we used rotisserie chicken.  It was awesome…and hearty enough to satisfy my hubby for dinner.  This one will be made again!

Barbecue Chicken Gumbo

you will need:
2 tablespoons olive oil
3 tablespoons butter
4 ribs celery, chopped
1 large green bell pepper, chopped
2 medium onions, chopped
4 cloves garlic, finely chopped
1 large fresh bay leaf
2 tablespoons fresh thyme leaves, finely chopped
Salt and pepper
3 tablespoons flour
2 cups chicken stock
1 15-ounce can tomato sauce
2 tablespoons light brown sugar
2 tablespoons cider vinegar
4 tablespoons Worcestershire sauce
4 tablespoons hot sauce
1 to 1 1/2 pounds cooked chicken*, white and dark meat, shredded
1 10-ounce box frozen sliced okra, thawed (optional)
Thinly sliced scallions & sliced pickled jalapeños, for serving

In a large pot, heat the oil over medium to medium-high heat. Melt in the butter. Add the celery, bell pepper, onions, garlic, bay leaf, thyme, salt and pepper. Cook until tender, about 15 minutes. Sprinkle in the flour and stir a couple of minutes. Add the stock, then reduce the heat a bit and cook to thicken.

In a bowl, stir together the tomato sauce, brown sugar, vinegar, Worcestershire sauce and hot sauce. Pour into the gumbo. Stir in the chicken and okra (if using) and simmer to thicken.

Serve in shallow bowls, topped with scallions and jalapeños

time: 15 minutes prep + 40 minutes cooking
