Caramelized Onion, Gruyere & Bacon Spread

I love snack foods, especially dips.  Nothing like totally ruining your dinner and stuffing your face til you feel as if you might burst due to filling up on dip.  Apparently I’m a glutton for punishment, because I do it EVERY TIME…never learn my lesson.

you will need:
3 tablespoons olive oil
3 ½ cups chopped onion
4 oz. gruyere cheese, shredded
2 tablespoon chives, chopped
1/3 cup light mayonnaise
1/3 cup fat free sour cream
¼ teaspoon salt
¼ teaspoon black pepper
4 slices bacon, cooked until crisp then crumbled

Preheat oven to 425°.  Heat large skillet over medium-high heat.  Add onion to the pan with olive oil.  Sauté for 5 minutes, stirring frequently.  Reduce heat to low and cook for 20 minutes, or until golden brown, stirring occasionally.  Let cool slightly.

Reserve 2 tablespoons of cheese.  Combine remaining cheese, caramelized onion, 1 tablespoon chives and the remaining ingredients in a bowl.  Transfer to a baking dish and sprinkle with reserved cheese.  Bake for 20 minutes until browned and bubbly.  When ready to serve, sprinkle with remaining chives.  Serve with an oven toasted baguette or some yummy crackers.  Oh and if you have leftovers, it’s delish as a spread on a sandwich!


makes: approx. 1½ cups of dip, enough for 6-8 people
time: 35 min prep & active cook time + 20 min baking time
