Cheesy Crab Bites

With the Super Bowl coming up next week it’s time to find some easy and delicious snack foods for your game-watching experience.  I feel it’s nice to have an option other than the usual chips and dips.  These little, cheesy crab bites are yummy and perfect for such an occasion.  In fact, we like to have bags of these prepped in our freezer for impromptu visitors.  The ingredients are few, the prep is easy and the taste is delicious…perfect!

You will need:
1 can lump crabmeat
8 oz cream cheese
1 jar Old English cheese (Kraft)
3/4 stick unsalted butter, melted
dash of garlic powder
6 English muffins, cut in half

Mix first 5 ingredients well in a medium size bowl. Spread mixture on 12 halves of English muffins.  Set on baking sheets or other tray, cover and place in the freezer until solid, at least 2-3 hours.

Using kitchen shears or a sharp knife, cut each English muffin half into 4 pieces.  At this point you can put in plastic bags and place back in your freezer until you are ready to serve them.

When ready to cook, heat your oven to 400° F and take your desired amount of crab bites out of the freezer and onto a baking sheet.  When oven is ready, place baking sheet in the center rack of the oven for about 10 minutes.  Turn the oven up to a low broil and cook until bites are bubbly and browned on top, watching carefully so they do not burn, about 3 minutes.  Take out of oven, let cool for about 5 minutes and then serve!

serves: 6 to 8 people (6-8 bites per person)
time: 15 min. prep + freezing time + 15 min. baking
