Chicken Thighs with Mustard-Agave Glaze

This recipe was another Pinterest find.  I came across Man-Pleasing Chicken, and naturally I was curious.  As you can see, the recipe is insanely easy, so I thought I’d give it a shot.  I did change around some ingredients to use what I had in my pantry.

I think the thighs are my favorite part of a chicken…they have the extra fat (ha!) so they stay so tender and juicy and packed full of flavor.  Despite the simplicity of the glaze, I really like the contrast of tangy and sweet.  And you can’t beat how easy the prep is.  This is a perfect dinner for a night when you don’t really feel like cooking but take out isn’t floating your boat either.  You know those nights…

Oh, if you were wondering…my man wasn’t extremely pleased.  He didn’t dislike the chicken, but mustard isn’t his favorite ingredient in sauce.  I really enjoyed it…maybe it’s really woman-pleasing chicken??

you will need:
8 boneless, skinless chicken thighs
½ cup dijon mustard
¼ cup agave nectar
1 tablespoon rice wine or apple cider vinegar
fresh herbs (either thyme or rosemary)

Preheat your oven to 450°.  In a small bowl, whisk together the dijon mustard, agave and vinegar.  Rinse and trim the chicken thighs.  Pat dry and place in a baking dish.  Season with salt and pepper.  Pour the mustard mixture over top and be sure all thighs are coated.

Place in middle rack of your oven and let cook for about 40 minutes, flipping the thighs about half way through.  When serving, spoon the glaze over top and then sprinkle with fresh herbs.

time: 10 minutes hands on + 40 minutes baking
