Couscous with Roasted Red Peppers, Feta & Mint

I’m convinced that couscous is the easiest and fastest side dish out there.  It’s a versatile grain, yet stays very light.  You can mix in so many different flavors to give it flavor.  I like the feta, peppers and mint because they are items I usually always have in my house/garden.

you will need:
1 cup couscous
4 oz feta, crumbled
½ cup roasted red peppers, chopped
½ cup fresh mint leaves, chopped
1 tablespoon olive oil
salt & pepper

Cook couscous according to package directions and let cool.  Fold in the feta, peppers, mint and olive oil.  Season with salt and pepper and mix.
