Cranberry walnut chicken salad

I have been in the mood for chicken salad, but didn’t want just the plain boring chicken and mayo kind.  So after perusing a couple different websites and blogs I decided I liked the combination listed below.  I tried it and it was actually a bit hit with my husband, too.  So this is a definite keeper, perfect to have handy as the weather is getting nicer.

You will need:
2 1/2 to 3 cups chicken, cooked and cubed (I bought a pack from Trader Joes)
1 cup chopped walnuts
3-4 stalks celery, cleaned and chopped
1 shallot, finely chopped
1 cup dried cranberries
1/4 mayonnaise (my favorite is Duke’s)
1/2 cup plain lowfat yogurt
2 tablespoons white wine vinegar
handful chopped fresh herbs (parsley or tarragon)
salt & pepper

Toss all ingredients together in a large bowl and taste for seasoning.  Super easy and really delicious.  I have been eating it for lunch on little flatbreads as a sandwich.

    I made the chicken salad last night.
    It was great!
    Because I like a “sweet” chicken salad, I added 2 tablespoons of apple butter to the mayo and yoguart mix.
