I love asparagus

Doesn’t your mouth water just looking at it?!?!  Mine does, but I suppose that is obvious from the title of this blog post.  When I saw it at the store I thought, yes, I need to eat this ASAP.

Tonight I just tossed it with some olive oil, garlic, salt and pepper and tossed it in the oven for 20 minutes at 425.

I also served it with Trader Joe’s frozen roasted potatoes with peppers and onions (follow directions on bag to heat up) and Whole Foods’ spinach and feta chicken sausage (pan fry until browned on all sides – about 6ish minutes, then toss in oven for 10 minutes at 425).

Easy peasy weeknight meal, and yummy to boot!
