Garlic Kale Chips

I was skeptical of kale chips before I tried them.  I thought, “how could that be delicious? A green leafy vegetable cannot be a chip!”  Well I was wrong, they are super good.  They never last more than a day in this house…I just can’t stop myself.

I’ve made them several times, always switching up the seasoning I use.  This version is a great stand-by with the garlic powder.  I like them with chopped garlic, smoked paprika, or chili powder.  Next time, I’d like to try them with fresh ginger, I think that would be delicious.

Anyway, you should definitely make these.  A bunch of kale always goes such a long way and this is a simple and tasty recipe to use up the last of it!  That’s exactly what I did with the bunch I got in my CSA box.

kale chips you will need:
½ bunch kale
2 tablespoons olive oil
1 teaspoon each of salt & pepper
1 teaspoon garlic powder

Preheat your oven to 325°F.  Prep your kale by taking out the big veins, rinsing, drying and ripping into pieces.  Place on a baking sheet, then season with salt, pepper and garlic powder.  Drizzle olive oil over the top and toss well.  Massage the leaves a bit, making sure that each is saturated with the oil.

Bake for about 15 minutes, rotating the pans half way through, until crispy.

makes: 3-4 cups of chips
time: 5 minutes prep + 15 minutes baking
