Kale Quinoa Pilaf

Holy cow.  This is my new favorite side dish.  I am a big fan of quinoa and am always looking for new ways to serve it.  This version comes together very quickly and is truly a one-pot dish.  The flavors and textures mesh very well.  Leftover s are great, too!
kale quinoa pilaf

you will need:
2 cups salted water
1 cup quinoa
½ bunch kale, washed and chopped into 1″ lengths
1 lemon, zested and juiced
4 scallions, sliced
½ cup toasted pine nuts
½ cup crumbled feta cheese
salt and pepper
olive oil

Bring the water to a boil and add the quinoa. Cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 15 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes.

While the quinoa is cooking, combine the lemon juice, lemon zest, scallions, olive oil, pine nuts, and feta cheese in a bowl and set aside. Check the quinoa and kale after 25 minutes to be sure it is ready.  All of the water should be absorbed, and the quinoa should have tiny spirals curling around it. If the quinoa still has a hard white center, you can steam a bit longer, adding more water if needed.

When the quinoa and kale are done cooking, fluff and combine with the remaining ingredients. Toss well, season with salt and pepper, serve and enjoy.
