Kale & Quinoa Salad with Maple Dijon Dressing

When it comes to eating kale raw, I’m a huge fan of Trader Joe’s organic Tuscan kale.  It’s not quite as earthy, if that makes sense.  So it’s my go-to for salads, and this salad is awesome.  The flavors and textures are great together…lots of depth to every bite.  And the dressing is the perfect blend of tart and sweet.  This salad hearty and totally satisfies when you are hungry.  It’s a new stand by for my lunches!

Hearty Kale Salad | Cheater Bites

you will need:
½ cup quinoa, rinsed
1 cup water
6 cups kale, finely sliced
1 large apple, diced
seeds of 1 pomegranate
½ cup walnuts, coarsely chopped
½ cup feta, crumbled
2 tablespoons cider vinegar
2 tablespoons olive oil
1 clove garlic, minced
1 tablespoon maple syrup
2 teaspoons dijon mustard
½ teaspoon curry powder
salt and pepper to taste

In a small saucepan, bring the quinoa and water to a boil.  Once boiling, reduce the heat to a simmer and cover for about 15 minute.  Take off of the heat and let sit, covered, for 5 minutes more.

Toss the kale, quinoa, apple, pomegranate seeds, walnuts and feta in a large bowl.  Combine the vinegar, oil, garlic, maple syrup, dijon mustard, curry powder, salt and pepper in a jar.  Top jar with the lid and shake well.

When ready to serve, drizzle dressing over salad and toss well.
