Lauren, Queen of Burgers


So my sister-in-law Lauren is a burger connoisseur extraordinaire, and she really outdid herself with this one!  This is hands down one of the most delicious burgers I have ever tasted — great flavors and really hits the spot for a hot summer day picnic.

Lauren’s Juicy Lucy Burgers:

You will need:
1 lb ground beef
salt & pepper
1 teaspoon red pepper flakes
6 oz or so of Havarti cheese, thinly sliced
8 or so tablespoons Trader Joe’s tomato and basil hummus
1 large sweet onion, caramelized
3 tablespoons butter
large handful of lettuce
2 large dill pickles, very thinly sliced
4 good quality hamburger buns, toasted

Directions:
Put your ground beef in a bowl and mix it with salt, pepper and the red pepper flakes.  Split the beef into 4 equal sections for 4 separate burgers.  Take each section, one at a time, and split it equally in half.  Flatten each half into a thin, flat patty.  Place a couple of slices of the havarti cheese on top of one of the patties, and stack the 2nd patty on top.  Pinch the sides together to seal the cheese inside the burger.  Repeat this process for the rest of your burgers.

Preheat your grill or grill pan until very hot.  While grill is preheating, slice your onions and cook them in 3 tablespoons of butter, about 15 minutes until caramelized, and set aside.  Brush the grates with oil to keep the burgers from sticking.  Most sources say to grill the burgers for 7 minutes per side for medium.  If you like your burgers pinker in the middle, cook for only 5-6 minutes each side.  Once burgers are done, place them on a clean plate and toast the buns, cut side down for 1 minute.

Spread a tablespoon of the hummus on each of the buns, and top the burgers with a heap of caramelized onions, several slices of pickle and some crunchy lettuce.
I’m telling you, you need to run to the store and get the supplies to make these THIS weekend!  You will not be disappointed…I certainly wasn’t.  I can’t wait for Lauren to make more varieties of the Juicy Lucy…let’s hope she moves back to the east coast soon so my stomach can reap the benefits of her burgertastic skills!
