Linguini with Sausage & Kale

As I said a couple posts ago, I’m totally into kale lately.  This pasta is delicious and packs some serious protein…and as far as pasta goes, I feel like it’s not so unhealthy.  That is always a bonus in my book because I could eat pasta every day of my life…it is my kryptonite.  Matt has already requested that I make it again.  This recipe will definitely be in my weeknight rotation all winter long.
sausage & kale pasta

you will need:
1 lb linguini
1 lb spicy Italian chicken sausage, removed from casing
¼ cup dry white wine
½ to ¾ cup of heavy cream or half & half
1 bunch kale, trimmed and coarsely chopped
½ cup grated parmesan cheese

Boil pasta in a large pot of salted water until al dente.  Meanwhile, in a large saucepan, cook sausage over medium low heat until browned, about 7 minutes.  Add white wine and let cook off, about 3 minutes.  Add cream or half & half and simmer for about 7 minutes, until it thickens up a bit.  Add the kale and toss until wilted.  Add in the pasta.  Drizzle with olive oil, sprinkle with cheese and toss well.  Serve immediately.
