Mastering the art of cupcakes…

So after the fantastic time I had at my first experience with Sur la Table cooking classes, I decided that I needed to take another one…preferably involving desserts.  I found the description of the Mother’s Day Cupcakes class and decided it was necessary to sign up.  I strong-armed my friend Susie into going with me.

Overall it was a great experience.  We baked three different cupcakes with various icing flavors and learned lots of new techniques.  The ingredients were all prepped and measured and the clean up was done for us..pretty fantastic.  Here are the details:

  1. Devil’s Food Cupcakes with Chocolate Ganache – yummy chocolatey goodness, enough said really
  2. Coconut Cupcakes with Seven Minute Frosting and Fondant Bee decorations – great cake batter with a smooth coconut flavor, good frosting, though seven minute frosting isn’t my favorite…I prefer the more fattening varieties with butter or cream cheese..it was also fun to experiment with fondant!
  3. Strawberry Cupcakes with Strawberry Buttercream – delicious fresh strawberries in the batter and also this was the best buttercream EVER!  This is swiss buttercream which means that you whisk egg whites and sugar in a double boiler until the mixture reaches 160, then you whip it into submission until it turns into a meringue-ish consistency and then gradually add in the butter then strawberries
I’d make them all again for sure and I definitely want to take some more classes at Sur la Table in the future!
