Mixed greens salad with lemon-honey dressing

I have been in the mood for a salad lately, so my mission tonight was to create a really delicious salad with numerous contents already in my fridge/pantry.  I literally just threw a bunch of things together and then made my new faaaaaavorite salad dressing.  This is my new thing, making my own salad dressings….why have I never thought of this before?!  They are so easy to make, and always taste better than the store-bought ones.  So anyway, I highly recommend making your own salad dressings, especially this one!

I did not measure one single thing for my dinner tonight, I just couldn’t be bothered…so here are some approximations:

Lemon-Honey Dressing:
1/2 cup good olive oil
1/4 cup fresh lemon juice
3-4 tbsp honey (doesn’t matter what kind)
1 tbsp finely chopped shallot (tiny red onions, have a milder flavor)
salt & pepper to season

Put all ingredients in a jar, seal the jar and shake voraciously!  If you feel it’s a bit too thin, add more honey (and in the opposite direction, add more oil if you think it’s too thick).

The Salad:
1 box or bag of baby mixed greens
1 pint heirloom tomatoes, quartered (I love the multicolored ones from TJ’s)
1/2 yellow bell pepper (or the whole thing if you wish), diced in chunks
1/2 cucumber, cut however you prefer
2 scallions, thinly sliced
1/2 cup pecans, coarsely chopped
1/2 cup dried cranberries
5 slices applewood smoked bacon (I buy TJ’s brand), cooked til nice and crispy, then crumbled
3 oz or so of goat’s milk cheese, crumbled into large chunks
croutons if you like those on top (which we certainly do in this house)

Wash and dry all your veggies.  Toss the greens in a big bowl and add the chopped tomatoes, pepper, cucumber and scallions.  Toss well.  Add in the chopped pecans, cranberries, crumbled bacon and cheese and toss lightly….comme ça (that’s French for “like this” – I’m feeling fancy tonight):
Serve in bowls.  Add the croutons and dressing to the individual bowls as nobody likes a soggy salad and un-crunchy croutons!

Next time I will add a little champagne vinaigrette to the dressing; I think it will give it a bit more pizzaz (ha, what a funny word…I think I’ve had too much wine).  Also, next time I will serve this with some chicken on top to make it the whole meal instead of a side.

Oh and get excited…I bought a 3 pound box of strawberries today in preparation for making strawberry pie.  I’m already drooling at the thought…its my favorite pie EVER, and honestly might be up there as my favorite dessert – if someone ever did the unthinkable and held me at gunpoint and forced me to pick one…
