Mum’s Egg Salad

I love all kinds of salads…the traditional ones with lettuce to the mayonnaise laden protein salads.  I’ve been known to stand over the kitchen sink dunking crackers in containers of my mum’s egg salad.  I also sometimes just eat it with a spoon.  If you dig egg salad, this is the best!

you will need:
2 stalks celery, cut in pieces
4 green onions, cut in pieces
6 hard boiled eggs, halved
½ cup mayonnaise
juice of 1 lemon
salt & pepper to taste
handful chopped parsley

Add all ingredients (minus the parsley) to your food processor.  Pulse 5 or 6 times until everything is chopped evenly.  IF necessary, scrape down the sides with a spatula and pulse a couple more times.  Do not process until smooth.  Fold in the chopped parsley with a spatula.  Taste for seasoning and adjust salt and pepper accordingly.

makes: approx. 1½ cups
time: 10 minutes + time to hard boil eggs
