Mustard Chicken

Growing up, mustard chicken was a famous meal, just ask my sisters.  We still talk about it today.  I’m not sure why we all loved it so much, there is nothing that extraordinary about it, it’s just really tasty.  In fact, Mama Cheater Bite just made it up one day.  For some reason it’s been on my mind lately, so I decided to whip it up based upon what she had told me over the years.  I hope you enjoy this quick, simple chicken dish as much as my family does!

you will need:
2 boneless, skinless chicken breasts
salt & pepper
¼ cup dijon mustard
¾ bread crumbs
4 tablespoons flour
olive oil

Rinse and dry the chicken breasts. Cut in half lengthwise and cover in wax paper or plastic wrap. Using the flat side of a meat tenderizer, pound the chicken until about 1/4 inch in thickness. Coat with salt, pepper and slather with the mustard on both sides.  Mix the bread crumbs and flour in a shallow bowl.  Dredge the pieces of mustard-coated chicken in the bread crumb mixture.

Heat a large skillet with olive oil until very hot. Place chicken pieces in and cook on high for about 3 minutes per side, until brown and crispy. Serve immediately along with your favorite side dish or veggie…we had broccoli.
