Nutty Baked Blueberry & Maple Oatmeal

Baked oatmeal is a great, healthy warm breakfast option.  I particularly love it on a chilly morning.  I’ll hop out of bed and pop it in the oven and snuggle back up until its ready.  Nothing like coming downstairs to the yummy smells of cinnamon in your kitchen to brighten your morning!  This recipe is simple and tasty and makes a nice size portion.  It reheats well, making it wonderful for a healthy breakfast on the go.

you will need:
2 cups rolled oats
1 cup walnuts, toasted and chopped
⅓ cup maple syrup
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
¼ tsp. salt
2 1/4 cups whole milk
1 large egg
3 tablespoons coconut oil
2 cups blueberries (fresh or frozen)

Preheat oven to 375°F and butter the inside of a baking dish.  Combine the oats, baking powder, cinnamon and salt and set aside (this can be done the night before if you wish). In a large bowl, whisk the maple syrup, milk and egg.

Spread half of the oat mixture in the bottom of the baking dish. Top it with half of the nuts and blueberries, then add the rest of the oats on top. Pour the milk mixture over and give the dish a little shake. Top with the rest of the berries and nuts, and drizzle with the melted coconut oil.

Bake for about 40 minutes, until the top is golden and the oats have set. Serve warm with a drizzle of maple syrup if that strikes your fancy.
