Paula Deen’s Green Bean Casserole

I’ve always sort of been a fan of green bean casserole for Thanksgiving, though I didn’t grow up with it in my house.  I’ve eaten it at holiday potlucks over the years and decided to make it for our Harvest Feast with my students last Friday.  I searched for a new variation and came upon this Paula Deen recipe.  I figured the queen of butter couldn’t go wrong with this Turkey Day classic.

I enjoyed the onions and mushrooms playing a large role in this casserole.  I upped the amount of beans and decreased the amount of fried onion rings so that it wouldn’t be too rich.  I was happy with the result and would definitely make it again!

you will need:
1/3 stick butter
1 medium sweet onion, diced
1 cup sliced fresh mushrooms
6 cups sliced green beans
3 cups chicken broth
1 can cream of mushroom soup
1 cup French-fried onion rings
1 teaspoon kosher salt
1 teaspoon garlic powder
½ teaspoon pepper
1 cup grated cheddar cheese

Preheat the oven to 350° F. Melt the butter in a large skillet or sauté pan. Saute the onions and mushrooms in the butter.

Boil green beans in chicken broth for 10 minutes and drain. *I was feeling lazy and just used frozen Steamfresh green beans.*  Once cooked, add the green beans, mushroom soup, onion rings, and seasonings, to the onion mixture. Stir well.

Pour into a large greased baking dish. Bake for 25 minutes, then top the casserole with the cheese and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.

time: 15 minutes prep +35 minutes cooking
