Potato Kugle

I’m always in the market for a good side dish.  And sometimes I get bored with traditional potato preparations.  This is one of Mama Cheater Bites favorites and super easy to make, so I’ve adopted it.  It’s really yummy along side some steak and a green salad.

you will need:
2½ pounds yukon gold potatoes
2 tablespoons unsalted butter
3 tablespoons olive oil
½ teaspoon nutmeg
generous seasoning of salt & pepper

Place washed potatoes in a pot and cover with cold water.  Bring to a boil and simmer for 30 to 35 minutes, until fork tender.  Drain, and when cool enough to handle, scrape off the skin and coarsely chop them.

Preheat the oven to 450°.  Melt 1 tablespoon of butter in a 10 inch skillet, then add 3 tablespoons of olive oil.  Once hot, add in the potatoes.  Add in the nutmeg, pepper and salt and toss well to coat the potatoes.  Sauté for about 3 minutes on top of the stove, stirring occasionally.  Then using a spatula press the potatoes to make them lie flat and be more compact in the pan.

Place in the oven for 35 to 40 minutes, until nicely browned underneath and slightly brown on top.  Let cool for about 5 minutes and then invert the pan onto a heat safe plate to unmold the potatoes.  Cut as you would a pie and serve along side one of your favorite protein options.
