Tropical Mojito

I am not a big drinker these days.  Not that I’ve been a big drinker since college, but I really can’t have more than one beer or a glass of wine otherwise I fall asleep standing up.  Not really a great situation to be in when you have a wee one that needs mothering.  But I really love fun, summery mixed drinks.  So on a summer girls night I made these refreshing cocktails.

you will need:
2 cups strawberries
orange rum
1 cup coconut water
1 cup pineapple juice
soda water

Rinse and hull the strawberries, then chop into pieces and set aside.  Put about ¼ cup of the strawberries into a cocktail shaker and muddle them.  Fill about half way with ice.  Add 2 ounces (1 shot glass) of rum, and ¼ cup each of the coconut water and pineapple juice.  Then shake, shake, shake.  Pour into pretty glasses with about an inch to spare.  Top off with a splash of soda water, a spoonful of strawberries and serve!  Repeat when you need a refill.

makes: about 4 drinks
